Winter Wonderland Holiday Bread


Serves: 12

Prep Time: 20 minutes

Cook Time: 60 minutes

Total Time: 80 minutes


Ingredients:

· 1 cup brown sugar

· 1 egg

· 1 cup butternut squash, cooked, mashed

· 1 cup unsweetened applesauce

· 1/3 cup low-plain yogurt

· 1 tsp. vanilla extract

· ¾ cup flour

· 1 cup whole wheat flour

· 1 ½ teaspoon baking powder

· ½ teaspoon baking soda

· 1 teaspoon cinnamon

· ½ teaspoon nutmeg

· ½ teaspoon salt

· 1 cup dark chocolate chips

· Powdered Sugar, optional

· Shredded Coconut, optional


Directions:

1. Preheat oven to 400 degrees. Spray and flour a loaf pan (8 ½” x 4 ½”).

2. Whisk together brown sugar and egg. Add cooked butternut squash, apple sauce yogurt, and vanilla extract. Stir to combine.

3. In a separate bowl, combine flour baking powder, baking soda, spices and salt

4. Add dry ingredients to the wet ingredients and stir until just combined. Fold in chocolate chips.

5. Pour into pan and bake 45-50 minutes or until as inserted toothpick comes out clean.

6. Cool in pan for 10 minutes and then on a wire rack until cooled completely.

7. Optional: Dust powdered sugar or shredded coconuts over the bread.
