Sweet Corn Tamale Cakes

Yields: 5 servings



Ingredients:


Sweet Corn Cake Mixture

Corn Cakes:

· 1 ½ cup fresh sweet corn

· ¼ cup light butter, softened to room

temperature

· 2 Tablespoons Sugar or Splenda

· 1/8 teaspoon Salt

· ½ Cup Corn Masa Flour

· 2 Tablespoons Whole Wheat

All-Purpose Flour

· 1 ½ Tablespoons Olive Oil




Salsa Verde:

· 2 Tomatillos, roughly chopped

· 1 (4 oz can) Diced Green chilies,

drained

· 1 Green Bell Pepper, chopped

· 2 Tablespoon Fresh Jalapeno, diced

· 2 Tablespoons Fresh Cilantro, roughly

chopped

· 1 ½ teaspoons Granulated Sugar or

Splenda

· ¼ Teaspoon Ground Cumin

· ¼ Teaspoon Salt

· ¼ Teaspoon Ground Black Pepper


Homemade Salsa Verde and Pico De Gallo

Pico De Gallo:

· 2 Tomatoes, diced

· ¼ cup Red onions, diced

· 2 Tablespoons Fresh Cilantro, minced

· ½ teaspoon Lime Juice

· Salt and Ground Pepper to Taste


Directions:


Corn Cakes:

1. Add 1 cup fresh corn in a food processor until it is coarsely pureed. In a medium bowl add the pureed corn, softened butter sugar or Splenda and salt. Mix until combined

2. Add masa and flour and mix until no flour streaks remain. Add the remaining ½ cup of corn kernels and mix until corn is evenly distributed.

3. Measure ½ cup portions of the mixture and use your hand to form them into 3-inch wide patties.

4. Refrigerate Corn Cake Patties for 10-15 minutes before cooking.

5. Add the olive oil to a large skillet and preheat over medium-low heat. Add the patties to the skillet and cook until golden brown, about 5-7 minutes. Flip and cook the other side until golden brown, another 5-7 minutes.

Salsa Verde:

1. Combine all ingredients in a food processor. Pulse until combined, but still a little chunky. Transfer to a small bowl, cover and chill for at least 1 hours.


Pico De Gallo:

1. Place all ingredients in a small bowl and toss. Cover and chill at least 1 hour.
