Meatless Dirty Rice

Ingredients:
· 1 can vegetable broth
· 1 ½ cup long-grain rice, cooked (Use Vegetable Broth to Cook Rice)
· ½ cup cauliflower, pureed
· 1 tablespoon olive oil
· 2 cups mushroom, chopped
· 1 cup vegetarian crumbles
· 1 medium onion, chopped
· 2 celery rib, chopped
· 1 small green bell pepper, seeded and chopped
· 1 small red bell pepper, seeded and chopped
· 2 cloves garlic, minced
· 2 tablespoon liquid smoke
· 2 tablespoon Kitchen Bouquet
· Green Onions or Fresh Parsley, sliced – garnish
· Season to Taste

Instructions:
1. Heat olive oil in a cast iron pot. Add onion, garlic, red bell peppers, green bell peppers and celery. Cook for 5 minutes.
2. Add crumbs, mushrooms, cauliflower and rice. Mix well and continue to stir for about 5 minutes. Add liquid smoke and kitchen bouquet. All mixture to cook for another 5-10 minutes
3. Season to Taste. Garnish dish with green onions.
